Apple Carrot Pancakes

Ingredients
  

  • 3 eggs
  • 1/4 cup milk any kind
  • 1/4 cup honey
  • 2 tbsp melted butter
  • 12/ tbsp vanilla
  • 1 cup grated carrot about 1 large carrot
  • 1 cup grated apple about 1 large apple
  • 2 cups rolled oats gluten free works too!
  • 1/2 tbsp ground cinnamon
  • 1/4 tsp salt

Method
 

  1. Combine the eggs, milk, honey, butter, vanilla, carrots, apple in a blender until smooth.
  2. Add remaining ingredients and blend until smooth
  3. Heat a skillet over medium heat and add a little oil or butter; pour batter into small pancakes
  4. Cook about 3 minutes per side or until bubbles form on the surface. Enjoy!
  5. These store well in air-tight container in fridge for up to 5 days.
