Method
- Combine the eggs, milk, honey, butter, vanilla, carrots, apple in a blender until smooth.
- Add remaining ingredients and blend until smooth
- Heat a skillet over medium heat and add a little oil or butter; pour batter into small pancakes
- Cook about 3 minutes per side or until bubbles form on the surface. Enjoy!
- These store well in air-tight container in fridge for up to 5 days.
