Apple Crisp - Gluten Free!

Ingredients
  

  • 6 cups peeled sliced apples (use a variety if desired)
  • 1 Tbsp brown sugar coconut sugar can be used also
  • 1/2 cup coconut milk canned, full fat
  • 1 tsp ground cinnamon
  • 1/2 cup gluten-free all purpose flour
  • 1/4 cup brown sugar
  • 1 1/2 tsp ground cinnamon
  • 3-4 Tbsp coconut oil or subsitute butter

Method
 

Apple Pie
  1. Preheat oven to 350 degrees.
  2. Mix sugar, coconut milk, and cinnamon and stir to combine.
  3. Add sliced apples and stir gently until all apples are coated.
  4. Pour mixture into a 9X13 baking dish.
Topping
  1. NOTE: You may want to double the topping depending on how much you love it!
  2. In a small bowl, combine flour, sugar and cinnamon.
  3. Add 3 Tbsp of coconut oil and cut it into the flour mixture until crumbly.
  4. Add more coconut oil if needed (to make a crumbly but not wet mixture).
  5. Sprinkle over the apple pie mixture and bake for 35-40 minutes.

Notes

This is a delicious treat and the topping adds a sweet crunch. You can cut down on the sugar to reduce calories and it's still just as delicious! We've even baked the apples without topping and served this as a side dish. Make it your way!
