Easy Chicken Noodle Soup

Kids will love this delicious chicken and noodle soup anytime!

Ingredients
  

  • 2 tablespoons butter or margarine
  • 1 medium yellow onion finely chopped
  • Salt and black pepper
  • 8 cups chicken broth
  • 2 bay leaves
  • 2 medium carrots cut into ½-inch pieces
  • 2 celery stalks cut into ½-inch pieces
  • 6 ounces dried noodles such as egg noodles or short pasta
  • 3 cups shredded cooked chicken (from 1 rotisserie chicken)

Method
 

  1. Melt butter in stew pot.
  2. Add the onions, salt and pepper and cook for 3-4 minutes until slightly soft
  3. Add all ingredients except noodles and bring to a boil and boil for 3-4 minutes
  4. Add uncooked noodles and cook the soup on medium for about 6-7 minutes
  5. Remove bay leaves and add shredded chicken and simmer for 5-10 minutes

This soup is delicious on a cool fall evening and is perfect to help cure the common cold! You can use any noodles and kids will enjoy fun shaped pasta as an alternative. You can also add green peas or other vegetables to increase flavor and add more nutrients - use your imagination!
