Veggie Chicken Bites

Kids love helping make this treat and it's filled with fresh veggies!

Ingredients
  

  • 1 pound ground chicken
  • 1 cup grated zucchini measure before squeezing out
  • 1 cup grated carrot
  • ½ cup finely chopped spinach loosely packed
  • ½ Tablespoon Italian seasoning
  • ¾ teaspoon salt
  • black pepper to taste
  • oil for cooking optional

Method
 

  1. Put shredded zucchini in the middle of a paper towel. Wrap up the zucchini with towel & squeeze a few times to help drain out some of the zucchini’s moisture. Kids love doing this!
  2. In a large bowl, combine drained zucchini and remaining ingredients except oil.
  3. Using clean hands or a spoon, mix until well combined.
  4. Using a small cookie scoop or hands, form about 18 nuggets. (Wet hands makes it easier)
  5. Place the chicken bites on a plate or baking sheet covered with parchment paper.
  6. To skillet fry: Heat oil in a large skillet over medium heat. Cook bites until a golden-brown crust starts to form and chicken is cooked through for about 5 minutes per side.
  7. To oven fry: Place baking sheet with bites in the oven on 350. Cook about 20 minutes (or until chicken is done and bites are slightly browned).
  8. Leftovers keep well in fridge for 4-5 days.
