Method
- Drizzle olive oil over potatoes to coat lightly and place on baking sheet lined with foil or parchment paper
- Bake potatoes in oven at 375 degrees until tender (about 15-20 minutes)
- While potatoes are baking, mix all other ingredients in a small bowl
